A hearty, comforting soup filled with tender tortellini, savory sausage, and seasonal veggies.
Ingredients

1 pound turkey or chicken sausage, sliced

9–12 ounces cheese tortellini

2 carrots, diced

2 celery stalks, diced

1 medium onion, chopped

3 garlic cloves, minced

4 cups vegetable or chicken broth

1 can diced tomatoes
-
2 cups spinach or kale
-
1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt & pepper to taste
Instructions

Heat olive oil in a large soup pot over medium heat.

Brown the sliced sausage.

Add onion, carrots, and celery; sauté until softened.

Stir in garlic and cook for 1 minute.

Add broth, diced tomatoes, Italian seasoning, salt, and pepper.

Bring to a simmer, then add tortellini.

Cook until tortellini is tender.

Stir in spinach or kale until wilted.

Serve hot.
Notes
Add more broth for a thinner soup.
Use frozen tortellini if fresh is not available.
