Description

A hearty, comforting soup filled with tender tortellini, savory sausage, and seasonal veggies.


Ingredients

  • 1 pound turkey or chicken sausage, sliced

  • 912 ounces cheese tortellini

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 4 cups vegetable or chicken broth

  • 1 can diced tomatoes

  • 2 cups spinach or kale

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • Salt & pepper to taste


Instructions

  • Heat olive oil in a large soup pot over medium heat.

  • Brown the sliced sausage.

  • Add onion, carrots, and celery; sauté until softened.

  • Stir in garlic and cook for 1 minute.

  • Add broth, diced tomatoes, Italian seasoning, salt, and pepper.

  • Bring to a simmer, then add tortellini.

  • Cook until tortellini is tender.

  • Stir in spinach or kale until wilted.

 

  • Serve hot.

Notes

Add more broth for a thinner soup.

Use frozen tortellini if fresh is not available.
