Description

A smooth vanilla custard baked gently and topped with a crisp caramelized sugar crust.


Ingredients

  • Heavy cream

  • Egg yolks

  • Granulated sugar

  • Vanilla extract or vanilla bean

  • Salt

  • Hot water


Instructions

  • Heat cream and vanilla until warm.

  • Whisk egg yolks, sugar, and salt.

  • Slowly combine cream with eggs.

  • Strain and pour into ramekins.

  • Bake in a water bath at 325°F until just set.

  • Chill completely.

 

  • Sprinkle sugar and caramelize before serving.
