Ingredients

1½ pounds boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

1 (13.5-ounce) can coconut milk

¼ cup fresh lime juice

1 tablespoon lime zest

2 teaspoons ground ginger

1 teaspoon ground cumin (optional)

1 teaspoon paprika

Salt & black pepper to taste

Fresh cilantro and lime wedges for garnish (optional)
Instructions

Season chicken with salt and black pepper.

Heat olive oil in a large skillet over medium heat.

Add onion and cook until softened.

Stir in garlic and cook until fragrant.

Add chicken pieces and brown lightly on all sides.

Sprinkle in ginger, cumin (if using), and paprika; stir to coat.

Pour in coconut milk, lime juice, and lime zest.

Reduce heat and simmer until chicken is fully cooked and sauce is smooth.
