Description

A creamy, zesty one-pan dish with tender chicken simmered in a coconut lime sauce.


Ingredients

  • pounds boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 1 (13.5-ounce) can coconut milk

  • ¼ cup fresh lime juice

  • 1 tablespoon lime zest

  • 2 teaspoons ground ginger

  • 1 teaspoon ground cumin (optional)

  • 1 teaspoon paprika

  • Salt & black pepper to taste

  • Fresh cilantro and lime wedges for garnish (optional)


Instructions

  • Season chicken with salt and black pepper.

  • Heat olive oil in a large skillet over medium heat.

  • Add onion and cook until softened.

  • Stir in garlic and cook until fragrant.

  • Add chicken pieces and brown lightly on all sides.

  • Sprinkle in ginger, cumin (if using), and paprika; stir to coat.

  • Pour in coconut milk, lime juice, and lime zest.

  • Reduce heat and simmer until chicken is fully cooked and sauce is smooth.

  • Taste and adjust seasoning.

 

  • Serve garnished with cilantro and lime wedges.

Notes

Adjust thickness by simmering longer uncovered.

Fresh lime zest adds brightness.
