Description

A creamy, comforting soup made with tender rotisserie chicken and savory mushrooms. Perfect for quick dinners or cozy lunches.


Ingredients

  • 2 cups shredded rotisserie chicken

  • 8 oz mushrooms, sliced

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 4 cups vegetable broth

  • 1 cup heavy cream

  • 1 teaspoon thyme

  • Salt and black pepper to taste

  • 1 tablespoon olive oil


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add onion and cook until soft.

  • Add mushrooms and garlic; cook until lightly browned.

  • Pour in broth and add chicken.

  • Stir in cream and thyme.

  • Simmer gently for 10 minutes.

 

  • Season to taste and serve hot.

Notes

Keep heat low after adding cream.

Adjust thickness with extra broth if needed.
