Ingredients

4 boneless, skinless chicken breasts

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 tablespoon olive oil

1 cup shredded mozzarella

1 cup diced tomatoes, drained

¼ cup fresh basil, chopped

1 teaspoon balsamic vinegar or lemon juice

1 tablespoon olive oil for searing
Instructions

Preheat oven to 400°F.

Mix tomatoes, mozzarella, basil, and balsamic or lemon juice.

Cut a pocket in each chicken breast.

Season chicken with salt, pepper, garlic powder, and Italian seasoning.

Stuff each breast with the tomato mixture.

Heat olive oil in a skillet and sear chicken on both sides.

Bake 18–22 minutes or until chicken reaches 165°F.

Rest 5 minutes before serving.
Notes
Drain tomatoes well so the filling stays thick.
A deeper pocket helps keep the filling inside.
Storage
Refrigerate leftovers up to 3 days. Reheat in a low oven at 300°F until warm.
