Description

A bright and flavorful one-pot meal with tender chicken, zesty lemon, and perfectly cooked orzo pasta.


Ingredients

  • pounds boneless, skinless chicken breasts

  • 1 cup orzo pasta

  • 3 cups low-sodium chicken broth

  • Juice of 2 lemons

  • Zest of 2 lemons

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • Salt & black pepper to taste


Instructions

  • Cut chicken into bite-sized pieces and season with salt and pepper.

  • Heat olive oil in a large deep skillet over medium heat.

  • Add chicken and cook until golden and cooked through.

  • Stir in garlic and oregano for about 1 minute.

  • Add orzo and toss to coat in juices.

  • Pour in chicken broth and lemon juice; bring to simmer.

  • Cover and cook 10–12 minutes until orzo is tender.

  • Stir in lemon zest and adjust seasoning as desired.

 

  • Serve warm.

Notes

Add extra broth if needed to prevent dryness.

Fresh lemon zest adds the best citrus flavor.
