Description
A bright and flavorful one-pot meal with tender chicken, zesty lemon, and perfectly cooked orzo pasta.
Ingredients

1½ pounds boneless, skinless chicken breasts

1 cup orzo pasta

3 cups low-sodium chicken broth

Juice of 2 lemons

Zest of 2 lemons

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt & black pepper to taste
Instructions

Cut chicken into bite-sized pieces and season with salt and pepper.

Heat olive oil in a large deep skillet over medium heat.

Add chicken and cook until golden and cooked through.

Stir in garlic and oregano for about 1 minute.

Add orzo and toss to coat in juices.

Pour in chicken broth and lemon juice; bring to simmer.

Cover and cook 10–12 minutes until orzo is tender.

Stir in lemon zest and adjust seasoning as desired.

Serve warm.
Notes
Add extra broth if needed to prevent dryness.
Fresh lemon zest adds the best citrus flavor.
